Baked Shrimp Scampi


2 lbs small shrimp or 1lb large shrimp, uncooked, in shell
3 tablespoons extra virgin olive oil
salt and pepper to taste
12 teaspoons minced garlic
1/4 cup shallots, minced
3 tablespoons parsley leaves
1 tablespoon rosemary, minced
1/4 teaspoon roasted red pepper flakes
1 teaspoon lemon zest
2 tablespoons lemon juice
1 large egg
2/3 cup Panko bread crumbs
lemon wedges for garnish

How to make it:

Preheat oven to 425*
Peel, devein, and butterfly shrimp, leaving tails on. Place shrimp in mixing bowl and toss gently with olive oil, wine, and salt and pepper. Allow to sit at room temperature while you make garlic mixture.
In small bowl, mash butter with garlic, shallots,parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, and salt and pepper until combined.
starting from outer edge of baking dish, arrange shrimp in single layer cut side down with tails curling upwards towards center. Pour shrimp marinade over shrimp, and garlic mixture over shrimp. Bake for 10-12 minutes. Place under broiler for 1 minute.
Garnish with lemon wedges
