Ingredients
500g All purpose flour
½ cup warm milk
¾ cup warm water
2 tsp yeast
1½ tsp salt
1 tbsp sugar
1 egg
2 tbsp oil/butter
extra oil to oil the bowl
1 egg for the egg-wash
Instructions
In a mixing bowl, combine the flour, yeast, sugar and salt.
In another small bowl, whisk together the water, milk and egg.
With the paddle attachment in your food processor, mix the dry ingredients and add the water-milk-egg mixture and mix to combine.
Switch to the dough hook and knead the dough for about 5 minutes.
Add the oil or butter and knead for a further 5-10 minutes (I kneaded it for about 8 minutes), until the dough is shiny, smooth and a little tacky to the touch.
Lightly oil a big bowl and place the dough in this bowl.
Make sure the dough is well oiled on the surface too.
Cover with plastic wrap and store in the fridge overnight for up to 24 hours.
On the day you bake the rolls - turn out the dough on to a lightly floured surface and lightly dust the surface of the dough as well.
Roll the dough out into a rectangle that's about 16 inches in length and 4-5 inches in width.
FOR HOT DOG BUNS - Cut the dough into 8 sections and place these on a parchment paper lined baking tray - about 1.5 inches apart.
FOR BURGER BUNS - Cut the dough into 6 sections and roll these dough portions in your hand to form smooth balls and place them on the parchment paper with 2 inch spacing.
Mist with oil, and cover with plastic wrap and let them rise for 1 hour in a warm place till they have just about doubled in size.

Preheat the oven to 180°C / 350°F about 30 minutes prior to baking.
Brush the hot dog rolls with the egg-wash
(lightly beaten egg) and bake in the preheated oven until they are golden brown on top and sounds hollow when tapped, which should take about 15-20 minutes
(optional - sprinkle sesame seeds or poppy seeds on the egg wash brushed dough before baking).
Remove from the oven and let it cool down enough to be handled comfortably.
Best eaten on the same day. Will keep longer in an air tight container in the fridge.
