Carrot Salad


    Ingredients

    Mayonnaise - 2/3 Cup
    Fresh Lemon Juice - 2 Tablespoons
    Salt - 1/2 Teaspoon
    Sugar - 1 Tablespoon
    Grated Carrots - 4 Cups
    Crushed Pineapple, Well Drained - 1-20 Ounce Can
    Raisins - 1 Cup
    Pecans, Coarsley Chopped - 1 Cup

    Instructions


    1. In a small bowl add mayonnaise, lemon juice, salt and sugar and whisk until well combined.
    2. In a medium bowl add carrots, pineapple, raisins and pecans. Pour mayonnaise mixture over carrots and toss until well combined.
